You may have noticed that I don’t often ever post recipes on this blog.
This is because I don’t cook.
Thankfully, Tim has been willing to prepare our meals since my pregnancy/recovery. (However, this will soon be changing, as now I’m taking on this stay at home wife/mom role, full time!)
Usually we don’t exactly eat the most healthy of foods. This is something we’ve been slowly working on, but I’m just not a veggie-eating type girl. I’m the type of pescetarian who eats mostly pasta, cheese, and fruits. It’s not that I don’t like veggies, it’s just that I like other foods more. I’m not proud of this, but sadly it’s true. Well, a few days ago when Tim told me that kale was on the menu, I wasn’t exactly stoked, but I was definitely willing to try it.
And how was my first time eating kale?
Amazing.
So amazing, in fact, that I don’t want to keep the salad recipe to myself.
Baby Kale Salad with Peaches
Ingredients
- 2 teaspoons honey
- 1 teaspoon melted butter
- 2 ripe peaches, peeled and halved
- 1½ cups baby kale
- ¼ cup thinly sliced red onion
- 1 tablespoon extra virgin olive oil
- 2 teaspoons fresh lemon juice
- ½ teaspoon salt
Directions
- Combine honey and butter, and brush over peaches.
- Place kale in a bowl, and top with peaches and onions.
- Top with oil, lemon juice and salt, and toss.
Quick, easy, delicious, and (I’m assuming) healthy!
